Italian Drumstick Bake


8 chicken lovely legs

4 cocktail onions, halved

1/4 cup (125ml) olive oil

3 cloves garlic, crushed

1 roll Turkish bread, torn into rough croutons

250g punnet cherry tomatoes

basil, salad leaves, rice, to serve


1.  Preheat oven to moderate, 180 C.

2.  In a large baking dish combine chicken, onions, 3 tbsp olive oil and garlic.  Toss ato coat chicken well.  Season to taste.  Bake 30 minutes.

3.  In a bowl toss bread in remaining olive oil.  Sprinkle evenly over chicken with tomatoes.

4.  Bake a further 10-15 minutes until chicken is cooked through and croutons are golden and crisp.  Sprinkle with basil to serve.  Accompany with rice.
