Mango and Coconut Flan


8 egg whites

2 cups (320g) pure icing sugar

2/3 cup (100g) self-raising flour

1 cup  almond meal

1 cup dessicated coconut

1 tbsp finely grated lime rind

185g butter, melted

2 small mangoes, sliced thinly

1/4 cup lime marmalade, warmed

1 tbsp boiling water


1.  Preheat oven to moderated 180 C/160 C fan-forced).  Grease a 30cm round cake pan, line base with baking paper.

2.  Place egg whites in a large bowl; whisk lightly until combined.  Add combined sifted icing sugar, flour and almond meal, then coconut, lime rind and butter; whisk until combined.

3.  Pour mixture into a prepared pan.  Arange mango slices on top of mixture.  Bake in a moderate oven for about 1 hour and 25 minutes or until cooked when tested.  Allow flan to cool in pan.  Turn out onto a wire rack.

4.  Combine marmalade and water in bowl; brush marmalade mixture over top of flan.
