Wonton Soup


270 g (40 pcs) shanghai wonton wrapper

75g rice noodles (optional)

500g chicken, minced

1 tbsp vegetable oil

3 cloves garlic, minced

1 tsp ginger, minced

1/2 tsp salt

1/2 tsp ground black pepper

2 stalks spring onions, sliced thinly

6 cups chicken stock

2 cups water

2 tbsp fish sauce


1.   In a large mixing bowl, combine chicken with half of the garlic, salt and pepper.  Mix well.

2.  Lay a wonton wrapper on a flat surface and place 1 tsp of mixture on the centre and fold up forming a dumpling.

3.  In a large saucepan, saute garlic and ginger until cooked.  Add the chicken stock, fish sauce and water.  Bring to the boil.  Add rice noodles.  Drop the dumplings and cook for approximately 5 minutes.  Season with salt and pepper.

4.  Serve topped with spring onions.
