Chicken Parmigiana

1.5 kg chicken thigh fillets

1 jar (575g)  pasta sauce

3 tbsp olive oil

2 cups grated mozzarella cheese

salt and pepper, to taste


1.  Season the chicken with salt and pepper.  Heat oil and cook the chicken, in batches for 2-3 minutes, then remove.

2.  Transfer the chicken, on a single layer  into a  shallow ovenproof dish.

3.  Pour the pasta sauce over the chicken and top with cheese.

4.  Bake chicken in a 200 C fan-forced oven for 15 minutes, or  until the cheese has melted and the sauce is bubbling.

5.  Serve with vegetables or salad and some pasta or potatoes, if you like.
