Palitaw (sweet flat rice cake)




500g glutinous rice flour

1/2 cup sesame seeds, toasted

1/2 cup shredded coconut

1/2 cup white sugar

450ml water


1.  Combine glutinous rice flour and water in a large mixing bowl.  Mix well.

2.  Scoop about 2 tablespoons of glutinous rice flour mixture and form into a ball-shaped.

3.  Using your thumb, press the middle of the dough.

4.  Boil water in a large saucepan.  Add the dough, one at a time.

5.  When the dough starts to float, take it out from the saucepan.  Transfer into a collander allowing water to drip.

6.  Meanwhile, combine sugar and roasted sesame seeds then mix well.

7.  Roll the rice cake in shredded coconut then in the sugar-sesame seed mixture.

8.  Arrange in a serving plate.
