Baked Garlic and Chilli Chicken



2  chicken marylands (700g)

4 cloves garlic, crushed

1/4 cup (75g) sambal oelek

2 tbsp honey

2 tbsp light soy sauce

2 tbsp brown sugar

2 tbsp peanut oil


1.  Combine chicken , garlic, sambal oelek, honey, soy sauce, sugar and oil in medium bowl.  Cover; refrigerate overnight.

2.  Preheat oven to 180 C/160 C fan-forced.

3.  Place chicken on rack over baking dish; roast 25 minutes.  Increase oven temperature to 220 C/200 C fan-forced; roast further 10 minutes or until chicken are crisp and tender.
