Kutsinta (brown sticky rice cake)




1 1/2 cups rice flour, sifted

1/2 cup self raising flour, sifted

1 cup brown sugar

3 cups water

1 1/2 tsp lye water

saffron threads, soaked in 1 tbsp water

1/2 cup moist flakes coconut, to garnish


1.  Combine rice flour, self raising flour and brown sugar  in a large mixing bowl and mix well.

2.  Slowly blend in water and lye water until combined.  Blend in saffron and mix well.

3.  Pour into a small individual moulds.  Arrange in a steamer and cook for about 50-60 minutes.

4.  Remove from the moulds and arrange in a serving plate top with moist flakes coconut .
