Maja Blanca (sweet coconut flavoured pudding)




175g cornstarch

750g can corn kernels, drained

2 x 270ml coconut cream

1/2 cup (125ml) condensed milk

300g white sugar

50g butter, melted

1 egg yolk

1 cup toasted shredded coconut, to garnish


1.  In a saucepan, mix corn kernels, coconut cream, condensed milk, sugar, butter and cornstarch until smooth.

2.  Cook over moderate heat for about 30 minutes.  Stir constantly.

3.  Whisk in the eggyolk then remove from heat.

4.  Pour over a mould or container.

5.  Chill then serve topped with toasted coconut.
