Macaroni Salad -ala-Yollie


400g chicken breast fillets

250g elbow pasta

1 medium carrot, sliced finely

1 stalk celery, washed, trimmed and sliced finely

2 tbsp condensed milk

500g Best foods mayonnaise (or any good quality mayonnaise but I prefer Best foods)

250g block Kraft cheddar cheese, diced

1/2 cup (125g) raisins

440g can diced pineapples, drained

salt and white pepper, to taste


1.  Boil chicken with salt and pepper until cooked through.  Remove chicken and let it cool.  Discard broth.

2.  Shred chicken finely and set aside.

3.  Cook pasta al dente.  Drain.  Set aside.

4.  In a large mixing bowl, combine shredded chicken, pasta, pineapples, raisins, cheese, carrots and celery.  Mix gently.

5.  Add mayonnaise and condensed milk.  Mix gently.  Season with salt and pepper.

6.  Refrigerate for a few hours.

7.  Serve cold.
