Spicy Squid



1/2 kg calamari, cleaned and sliced

4 cloves garlic, crushed

1 onion, chopped

1 red long red chilli, finely chopped

1 tsp. brown sugar

salt and pepper, to taste

2 tbsp vegetable oil

2 tbsp tomato sauce

1/4 cup water

2 stalks spring onion, for garnishing


1.  Heat oil in a medium saucepan.  Cook garlic and onion until soft.  Add brown sugar and water.  Add calamari, cover and simmer until sauce is thick and tender for about 5-8 minutes.

3.  Towards end of cooking, add the red chilli and adjust spiciness level.  Season with salt and pepper, to taste and add a dash of tomato sauce.

4.  Top dish with chopped spring onions and serve.
