Almond, Cheese and Bacon Crostini


1 crostini, sliced

4 middle rashers bacon, diced

50g button mushrooms, sliced

75g mayonaise

50g tasty cheese

25g flaked almonds, toasted

1 small apple, sliced thinly

1.  Heat butter  and olive oil in a small pan.  Cook mushrooms until soft.  Add bacon and fry until crispy. Set aside.

2.  In a large bowl, combine mushrooms, bacon, cheese, mayonnaise, parsley and almonds.  Mix gently.

3.  Grill crostini.  Arrange crostini in a serving platter topped with bacon mixture.  Garnish with thinly sliced apple and parsley.
