My Yummy Rice Cake



3 cups (640g) glutinous rice

3 cups water

1 can (270ml) coconut milk

2 cups brown sugar

30g butter


200ml coconut milk

1 cup brown sugar


1.  Combine the glutinous rice and water in a rice cooker and cook.  Set aside.

2.  In a large saucepan, combine the coconut milk, brown sugar  and butter and cook over a medium heat until the texture becomes thick; stirring constantly.

3.  Add the cooked rice in the coconut milk and sugar mixture; mix well.  Continue cooking until all the liquid evaporates.

4.  Transfer the rice mixture in a baking pan; flatten.  Spread topping mixture evenly over the rice mixture.

5.  Place in a preheated 160 C oven and bake for 30 minutes.

6.  Serve with a slice mango or coffee.

TOPPING:  Combine all topping ingredients in a heavy saucepan.  Simmer for 5 minutes or until mixture thickens slightly.
