Strawberry and Smoked Salmon Salad



250g punnet strawberries, hulled, finely sliced

200g packet smoked salmom, sliced

150g mesclun lettuce

1/2 cup loosely packed mint leaves


2 tablespoons balsamic vinegar

2 tablespoons extra-virgin olive oil


1.  In a large bowl, combine the strawberries, smoked salmon, mesclun and mint leaves.

2. DRESSING:  Combine all dressing ingredients in a small jug.  Season to taste.

3.  Drizzle Dressing over salad.  Toss gently.  Serve with crusty bread.
