Prawns with Watermelon and Feta Salad



3 limes, shredded rind and juice (you’ll need 1/3 cup juice)

1/4 cup extra virgin olive oil

1 tbsp caster sugar

1 tbsp red wine vinegar

1 long green chilli, deseeded, finely chopped

1/2 bunch mint leaves, finely chopped

1 kg large prawns

1/2 small seedless watermelon, skin removed

1/2 small red onion, finely sliced

200g feta cheese, drained, crumbled


1.  Whisk lime rind, juice, oil, sugar, red wine vinegar, chilli and mint in a jug.  Set aside.  Peel and devein prawns, leaving tail intact.

2.  Cut watermelon into 3cm pieces.  Place watermelon into a large bowl.  Add prawns, onion and feta cheese.  Gently toss until combined.

3.  Transfer to serving plates.  Spoon over dressing and serve.
