Ham, Potato and Feta Salad



1kg potatoes, halved if large

175g feta cheese cubes in oil

1 tsp dried oregano

8 tomatoes, roughly chopped

100g pitted black olives

225g (about 4 slices) thick sliced ham, cut into large pieces

handful of chopped parsely


1.  Bring a large pan of water to the boil (no need to add salt).  Add the potatoes and cook for 15 minutes until tender.

2.  Meanwhile, heat two tbsp of the feta oil in a pan.  Add the oregano and tomatoes and cook over a medium heat for 3-4 minutes, until slightly softened.  Stir in the olives, feta cheese and ham, and stirwell.  Drain the potatoes and return to the pan.

3.  Tip the olive and tomato mixture into the potato pan and season.  Sprinkle over the parsley and toss lightly.  Serve warm or cold.
